Sodium carboxymethyl cellulose, also known as CMC or cellulose gum, E466, is an additive used in different industries as a thickener, stabilizer or filler among other applications. It is a water-soluble, anionic cellulose derivative. It is light tan to white, odorless, tasteless, free-flowing powder that is fairly hygroscopic. As the material is derived from natural cellulose, it exhibits gradual biodegradability and can be incinerated after use, making it a very environmentally friendly material.

It is used in a broad range of applications including food and feed additives, cosmetics, thickening and binding agents, binders, water absorbing materials, and water retention agents.

Food Applications:

As a viscosity modifier or thickener, and to stabilize emulsions in various products including ice cream. 

CMC is used extensively in gluten-free and reduced-fat food products.

Non-Food Application:

It is also a constituent of many non-food products, such as toothpaste, laxatives, diet pills, water-based paints, detergents, textile sizing, reusable heat packs, and various paper products

Cellulose derivatives for commercial use are usually based on cellulose from wood or cotton sources.

Wood contains about 40–50% cellulose, while cotton contains about 85–97% cellulose.

Highly purified grades of CMC, at least 99.5% pure. It is listed ‘GRAS’ (generally recognized as safe) under the US Code of Federal Regulations (CFR) Title 21 Section 182.1745. Definitions for the identity and purity of cellulose gum are set out in the Food Chemical Codex as well as by the United Nations World Health Organization (FAO/WHO).

The European Community Directives assign E466 to this food additive and the synonym cellulose gum may be used for labeling purposes.
