Both high and low acyl gellan gum can be applied in beverages, but low acyl gellan gum is widely used as a stabilizer in suspension beverages. 

Why?

With the help of Ca or Na ions, low acyl gellan gum forms a stabilization system that keeps the particles & seeds suspended in the solution made of gellan gum.

Due to its perfect transparency, excellent acid/heat stability, and good flavor release, low acyl gellan gum has been widely used in various suspension beverages, such as coconut beverages, aloe vera beverages, chia seeds, basil seed drinks, etc.

It has both suspension and thickening properties, making the beverages taste rich and full.

As a result, low acyl gellan gum is a good recommendation in basil seed drinks, to prevent basil seeds from collecting at the bottom.

1. Low Acyl vs High Acyl Gellan Gum

Low Acyl Gellan Gum is a white powder. The solution made by low acyl gellan gum is clear and with high transparency.

High Acyl Gellan Gum is Dark Yellow Powder. The solution made by high acyl gellan gum is not so clear and with lower transparency.

The viscosity of High Acyl Gellan Gum is higher, so it can be used as a thickening agent.

For those products who need a thicker mouthfeel, we recommend high acyl gellan gum.

2. Recipes of Low Aycl Gellan Gum in Basil Seed Drink

Below is a recommended recipe for LA gellan gum in basil seed drinks, one kind of suspension beverage.

0.30%, or the appropriate amount

Remark: pH Value can be adjusted according to products flavor

you required, but must ensure that calcium carbonate dissolved completely, and that the pH

will affect the suspension temperature

3. How to Use Gellan Gum in Basil Seed Drink

Premix
Premix all materials except citric acid and basil seed, then pour them into deionized water and stir thoroughly.

Heat
Then heat the solution to 95°C and hold for 10 min to ensure complete dissolution

Adjust pH
Add the citric acid at appropriate dosage to adjust the pH, please be well noted that you’d better keep the pH value above 3.5.

Add Seeds
Add the basil seeds when the solution becomes clear and then cool to about 23°C, the basil seed will be evenly suspended in the solution and will not sink to the bottom.

4. Cautions

You must also be aware of the following important cautions when making Basil Seed drinks by using low acyl gellan gum.

1.Materials without salts can be directly added into water together with gellan gum
2.Materials with salts(or kations) should be added only when gellan gum is thoroughly dissolved.
3. The water used should be deionized water
4. The application of qellan qum should be in addition with KATIONS(Ca,Mg,Cl and so on)
5. Gellan Gum is soluble in cool water but need to heat up to 85°C-90°C for thoroughly dissolving.
6. The dosage of gellan gum should be adjusted according to pH materials added and particle sizes of fruit pulps.The higher dosage,the better performance.
