The previous article High Acyl Gellan Gum Application: In Acidic Beverages introduced the application of high acyl gellan gum powder in acidic beverages. Gellan gum powder can also be used to suspend and stabilize neutral beverages, including plant-based protein beverages, neutral dairy beverages, and coarse grains. A common feature of these products is that the liquid is not transparent.
High acyl gellan gum powder can be used in neutral beverage applications at very low levels, with 0.02-0.05% recommended.
It can be used alone to form soft and flexible gels or mixed with other gels to form different textures.
The beverage systems made with high acyl gellan gum powder are suitable for UHT and HTST sterilization methods.

In the plant protein beverage, high acyl gellan gum powder can not only effectively improve the taste, but also has the role of thickening and stabilizing the protein.

The combination of gellan gum powder and other hydrophilic colloids will produce more significant effects, such as: gellan gum powder with carrageenan, guar gum, acacia bean gum, etc. The synergistic effect of the combination can also achieve good stabilization effect.

The name of gellan gum powder can often be found in the ingredient list of such products as peanut & walnut milk, chocolate milk, fresh corn & mung bean juice.

It is easy to disperse high-acyl gellan gum powder in milk or other beverage systems by using the common mixers.

Gellan gum can be added alone or mixed with other additives.

Disperse the gellan gum powder or mixtures in cold water or beverage solids systems with stirring, heat to above 85°C until completely dissolved, then add the remaining additives, adjust pH, homogenize, and sterilize at UHT or HTST.

Recipe (For Reference Only)

Basic formula

  • High acyl gellan gum powder: 0.03-0.05%,
  • Sodium citrate 0.05%,
  • Sodium hexametaphosphate 0.02%,
  • Walnut powder 4%,
  • Sugar 4%,
  • Flavor and Colors with appropriate amount,
  • Add water to 100%.

Production process

 . Pre-processing walnut powder, add to deionized water, keep at 60°C for 30min, filter through colloid mill.

. Mixing well the gellan gum powder, salt and sugar and add the mixture to the above-mentioned solution under constant stirring.

. Heating up to above 85°C, keeping the solution for 15min.

. Adjusting the pH to about 6.8 with sodium bicarbonate, homogenize at about 50°C with a pressure of 15-35 MPa.

. UHT sterilization, 140°C, 3s, cooling and aseptic filling.
