Gellan Gum Properties

Gellan gum is a water soluble, off-white powder. It has a molecular weight greater than 70,000 daltons with 95 percent above 500,000 daltons. It forms gels when positively charged ions (i.e., cations) are added. Thus, the thickness and texture of gellan gum in various products can be controlled by manipulating the addition of potassium, magnesium, calcium, and/or sodium salts. In the same way, its melting temperature can be modified to either be below or above 100° C.

Gellan Gum Structure

Gellan gum is an exopolysaccharide, the chemical structure of gellan gum consist of a backbone of repeating unit of ?-d-glucose (d-Glc), l-rhamnose (l-Rha), and d-glucuronic acid (d-GlcA) and two acyl groups, acetate and glycerate, bound to the glucose residue adjacent to glucuronic acid. The composition of the three main constituents is approximately 60% glucose, 20% rhamnose, and 20% glucuronic acid.

Gellan Gum in Food:

With its unique and versatile properties, it is used commercially in a wide range of
food applications. These applications can be generally categorized into six application areas:

     - Water-based gels
- Bakery applications
- Dairy foods, Gellan gum in almond milk
- Suspending agent in Beverages
- Confections
- Fruit applications

Non-Food Application:

Used as Agar substitute in Culture media and other applications bactériologiques, Culture de tissus végétaux.

A General Instruction of Gellan Gum Applied in Beverages as Stabilizer and Suspending Agent

Instructed Steps in Actual Application:
1.Add 0.012% gellan gum into deionized water(soft water) and stir the solution for dispersing;
2.Heat solution 1. to 85?-90? for 15-20minutes for thoroughly dissolving;
3.Add KATIONS (Ca, Mg, Cl, and so on) at dosage of 0.08% max. and other materials into Solution 2. after gellan gum thoroughly dissolved and at proper temperature;
4.Put Solution3 into bottle for cooling down to 23??
5.Shake the the bottle of Step 4 for a permanent suspending effect.
